Quick Green Chili Quiche

Ingredients


4 large eggs

1 cup milk

1/3 cup heavy cream

1 tsp adobo seasoning mix(optional)

2 scallions, finely chopped

3 green chilis or you can use about 3/4 cup canned green chili

1/2 cup grated sharp cheddar

1/2 cup grated Monterey jack

1 pre-made pie crust -  homemade or store bought.

Adobo seasoning for sprinkling or use smoked paprika

Sea salt and cracked pepper







Directions

Position a rack near the top of the oven. Preheat to broil. Place the peppers on a baking sheet and set directly under the broiler. Char on both sides, about 3 minute per side. Set aside for a few minutes to cool then peel and dice.


Preheat oven to 450 degrees, Set a rack in the middle,


Place pie crust in a pie pan coated with cooking spray.

Crimp the edges then line the crust heavy-duty foil. Weigh the crust down with weights or dried beans in the center.

Bake for 10 minutes. Remove from the oven. Reduce oven temperature to 350 degrees. 


Sprinkle most of the green chiles, cheddar cheese, and Monterey Jack cheese in the bottom of the par-baked pie crust.


Combine the eggs, milk, and heavy cream and scallions together in a bowl; whisk for 2 minutes, until very well combined. Season with adobo, sea salt and freshly cracked pepper, to taste. 


Pour the egg mixture in the pie crust then top with remaining green chiles and shredded cheese. 


Place into the oven and bake at 350 degrees for 34 to 40 minutes, or until a knife inserted in the center comes out clean.
