Mole

Ingredients

2 tablespoons olive oil

2 cloves garlic, minced

1 onion, finely chopped

2 tablespoons dry mole blend

1 cup chicken broth

1 tablespoon tomato paste

2 tablespoons smooth peanut butter (optional)

1 tablespoon honey or brown sugar (optional)


How The Alchemy Happens


Heat olive oil in a large skillet over medium-high heat. Add the minced garlic and chopped onion. Sauté for about 5 minutes until the onion becomes translucent.

Stir in the dry mole blend and cook for an additional minute to release the flavors.

Add the chicken broth, tomato paste, peanut butter (if using), and honey or brown sugar (if using). Stir well to combine and bring the mixture to a simmer. Simmer for 5 minutes. Your mole sauce is now ready to use.


This is a very basic sauce. You can add ground pepitas, nuts, dried fruits and/or chocolate to create your own signature mole.
