Moroccan Inspired Couscous

Ingredients

  • 1 ½ cups couscous
  • 1 ¾ cups vegetable broth or water
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)


How The Alchemy Happens


Prepare the Couscous:

  • Place the couscous in a large bowl. In a small saucepan, bring the vegetable broth or water to a boil. Once boiling, pour it over the couscous, ensuring that all the grains are submerged. Cover the bowl with a lid or plate and let it sit for about 10 minutes or until the couscous absorbs all the liquid.

Sauté the Aromatics:

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes translucent and starts to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

Spice it Up:

  • Add the ground cumin, ground cardamom, ground cloves, and ground cinnamon to the skillet with the sautéed onion and garlic. Stir the spices into the mixture, allowing them to coat the onions and garlic evenly. Cook for about 1-2 minutes to release their flavors.

Combine and Fluff:

  • Once the couscous has absorbed all the liquid, use a fork to fluff it and break up any clumps. Add the spiced onion mixture from the skillet to the couscous and gently toss them together until well combined. Season with salt and pepper to taste. Adjust the spices if desired.

Serve:

  • Transfer the spiced couscous to a serving dish or individual plates. Garnish with freshly chopped parsley or cilantro for an added burst of freshness. Serve warm as a flavorful side dish alongside grilled vegetables, roasted meats, or tagines.
